Here is a recipe that has been in heavy rotation in my kitchen for the past several years. It is a great way to slip introduce vegetables to your families diet or to friends you may have over for dinner who are finicky eaters (You know who you are! :) ).

Serves 4
- Potatoes - 4-6 medium sized
- Carrots - 2
- Parsnips - 2
- Olive oil
- Rosemary, thyme, oregano or Italian seasoning
- 4-5 cloves of Garlic if preferred.
- Salt and pepper
Start by filling a large pot with hot water and add healthy dash (that's not enough, add more) of salt. Place on the stove top and turn the burner to "Holy Crap that's Hot."
Start cutting the potatoes into bite sized pieces. Throw into pot as you go. Then cut the carrots, throw them in. Cut the parsnips, but put them aside for now.
As the water begins to boil, set your timer for 5 minutes. When it buzzs/scares the crap out of you (Your mileage my vary) add the parsnips to the pot and reset for 5 minutes.
Place a colander in the sink, and drain the pot into it, letting the veg steam off for 4-5 minutes.
Place back into the pot with a splash or two of olive oil, salt, pepper, your herb(s) of choice and the cloves of garlic that you've smashed against the cutting board with the flat side of your cutting knife.
Put the top on the pot and hold it firm. Then shake the crap out of it. Pretend it's your manager/spouse/ex-spouse/brother-in-law's head. This will cause two things to happen
- It will make you feel better
- It will cause the potato to break up slightly, sending mashed bits of it to coat not only itself, but the other vegetables, which, after cooking, will become a crispy coating.
Spread on a baking sheet sheet and throw in the oven for an hour at 400. If you are cooking a Roast at a lower temperature for a longer period of time, adjust accordingly (ie: 325 for 90 minutes)
Remember to toss every 20 minutes.
